Turnips with Caramelized Onions

Portion Size: ½ cup kale 

Ingredients: Yields: 8 servings

Ingredients Notes: 
1½ – 2 pounds turnipsWashed, remove each end, peel,  and chopped
1 tablespoon olive oil
3 cloves garlicWashed, peeled and minced
½ cup white onionWashed, peeled and diced
salt and pepper


Steps:Directions: Critical Control Point /Quality Assurance
1Heat olive oil in a large skillet over medium high heat. Add turnips and onions. Cook until tender.
2Add the garlic and cook until soft. Season with Salt and pepperCook until internal temperature reaches 135°F.
3Raise heat to high add the stock or water and kale.
4Toss to combine. Cover and cook for 5 minutes.
5Remove cover and continue to cook, stirring until all the liquid has evaporated. Season with salt and pepper. Add the vinegar.

Variation: Turnips can be steamed, braised, microwaved, roasted, stir fry, boiled and mashed. May add choice of herbs or spices for flavor.
