Pinto Bean Mashed Sloppy Joe’s
Portion Size: ½ cup rice, ½ cup beans plus toppings

| 3 (15 oz.) cans no added salt pintos beans | Drained and rinsed. |

| 2 cans sloppy joe sauce or | |
| Sauce: | |
| 1 (15 oz.) can tomato sauce | |
| ½ cup catsup | |
| 1/3 cup brown sugar | |
| 1 tablespoon yellow mustard | |
| 1 teaspoon garlic powder | |
| ½ teaspoon salt and pepper | To taste |

| 1 | Mash beans. Or use a food processor to finely chop. | |
| 2 | In a sauce pan add chopped beans. Stir in tomato sauce, brown sugar, garlic, catsup, and mustard. Stirring constantly bring to a boil. Reduce heat and simmer 5-10 minutes | 3-4 minutes in a microwave safe dish. |
| 3 | Top each bun with 1/3 cup bean mixture. Serve hot. |
