Chicken Breast with Cranberry Apple Sauce

¼ cup oil | |
1 cup apple cider or juice | |
1 cup cranberry sauce | May use gelled canned. |
¼ cup honey | |
½ cup orange juice concentrate, thawed | |
1 teaspoon ground ginger |

1 | In a large nonstick skillet, heat oil over medium high heat. | |
2 | Brown chicken and season with salt and pepper. | |
3 | Add apple cider | |
4 | Cover and simmer for 8 minutes | Cook to 165 F for 15 seconds for Chicken |
5 | In a small bowl combine cranberry sauce, honey, orange juice concentrate and ginger. | |
6 | Pour sauce over chicken. | |
7 | Cook for 1-2 minutes until heated through |
