Couscous with Almonds

Portion Size: ½ cup

Ingredients: Yields: 8 servings

4 cups low sodium chicken broth or water
3 teaspoon lemon juice 
1 teaspoon grated lemon peel 
¼ teaspoon salt 
¼ teaspoon black pepper 
1 (10 oz.) package couscous 
2 cups frozen peas
1 (4 oz.) jar diced pimentos Drained 
½ cup  unsalted silvered almonds Toasted

1In a saucepan bring the broth, lemon juice, peel and salt to a boil. Stir in couscous, pimentos, and peas.
2Cover; remove heat and let stand for 5 minutes.Cook until internal temperature reaches 135°F.
3Stir in almonds.
