Herb Roasted Red Potatoes

5 lbs. Red Potatoes | Washed and trimmed |
¼ cup olive oil | |
2 tablespoons parsley flakes | |
1 tablespoon garlic salt | |
2 teaspoon paprika |

1 | Wash and scrub potatoes. | |
2 | Cut potatoes into even sized chunks. | |
3 | Spread in a single layer in a flat ovenproof dish. | |
4 | Pour over olive oil. | |
5 | Season with parsley, garlic salt and paprika. | |
6 | Stir them until coated. | |
7 | Bake at 400 degrees about 30 to 40 minutes. | |
8 | Remove and toss to coat. | |
9 | Return and bake for 10-15 minutes until tender. | Cook until internal temperature reaches 135°F. |
