Turnips with Caramelized Onions
Portion Size: ½ cup kale
Ingredients: Yields: 8 servings

| 1½ – 2 pounds turnips | Washed, remove each end, peel, and chopped |
| 1 tablespoon olive oil | |
| 3 cloves garlic | Washed, peeled and minced |
| ½ cup white onion | Washed, peeled and diced |
| salt and pepper |

| 1 | Heat olive oil in a large skillet over medium high heat. Add turnips and onions. Cook until tender. | |
| 2 | Add the garlic and cook until soft. Season with Salt and pepper | Cook until internal temperature reaches 135°F. |
| 3 | Raise heat to high add the stock or water and kale. | |
| 4 | Toss to combine. Cover and cook for 5 minutes. | |
| 5 | Remove cover and continue to cook, stirring until all the liquid has evaporated. Season with salt and pepper. Add the vinegar. |
Variation: Turnips can be steamed, braised, microwaved, roasted, stir fry, boiled and mashed. May add choice of herbs or spices for flavor.
