Mashed Potatoes

8 medium potatoes | Washed, peeled and cut up. |
½ teaspoon salt | |
½ cup nonfat milk | |
3 tablespoons margarine | |
¼ teaspoon pepper |

1 | Wash and pare potatoes. | |
2 | Cut into six sections. | |
3 | In a medium saucepan, cover with water and cook over medium heat for 20 to 25 minutes or until the potatoes are tender when pierced with a fork. | |
4 | Drain potatoes in a colander. | |
5 | Return the potatoes to the saucepan and with potato masher mash until no lumps remain. | |
6 | Add salt, milk, pepper and margarine. | |
7 | Mash until light and fluffy. |
