Crab Salad with Thousand Island dressing

Portion Size: 1 cup lettuce and ½ cup crab mixture

Ingredients: Yields: 8 servings

Ingredients Notes: 
3 cups imitation crabChopped 
8 Cups of lettuceSeparated, washed and torn into bite size pieces  
1/4 Cup onionWashed, peeled and minced
1 Medium avocado(optional) Washed, peeled and diced
1/2 Cup lowfat Thousand Island dressing* See recipe in cook book
3 TomatoesWashed, deseed and diced 
1/4 Cup slivered unsalted almonds Optional

1Wash lettuce and tear into bite size pieces
2In a large bowl combine crabmeat, onion, dressing and avocado. 
3Serve on 1 cup lettuce. Garnish with tomato slices and almonds.  Serve chilled
