Salmon Quesadillas or Tuna Quesadillas

3 Cups drained water packed, canned tuna or salmon | |
16 oz. low fat cheddar cheese | |
8 whole grain flour tortillas (burrito size) | May use whole grain |
1/2 cup diced bell peppers | Washed, trimmed and diced |
1/2 cup light sour cream | |
1/4 cup sliced green onions | Washed, trimmed and sliced thin |
1/2 cup salsa | |
1 avocado (optional) | Washed, peeled and diced |

1 | Place tortilla on a flat surface and layer with cheese, diced peppers, and salmon or tuna. Fold in half. | |
2 | Heat a non stick pan coated with vegetable oil over medium heat. | |
3 | Place quesadilla carefully into heated pan. Heat both sides in pan until golden brown. Turning once. | |
4 | Cut into 3 pieces. Garnish with sour cream, salsa, green onion and avocado. |
