Salmon Salad

| 3 cups canned salmon | Drained, water packed |
| 2 cups diced celery or cucumber | Washed, trimmed and diced |
| 1/4 cup onion | Washed, peeled and chopped |
| 1 tablespoon chives or parsley | May use dried or fresh. |
| 1/2 cup light mayonnaise | |
| 1 tablespoon lemon juice | |
| Lettuce and tomato (optional) | Washed, trimmed and sliced |
