Black Bean Broccoli and Rice Bowl

Portion Size: ½ cup rice, ½ cup beans plus toppings

Ingredients: Yields: 8 servings

Ingredients Notes: 
3 (15 oz.) cans no added salt pintos beansDrained and rinsed. 
2 cups brown rice
4 cups broccoliWashed, trimmed and chopped
2 tablespoons lower sodium taco seasoning mix
1 cup Pico de Gallo, mildOptional

1In a pot add rice and 5 cups of water. Cover. Bring to a boil. Reduce heat to low. Simmer 40-45 or until rice is tender.  Stir in taco seasoning. 
2Steam broccoli in microwave. Heat beans in microwave.4-7 minutes in a microwave safe dish.
3In a serving bowl, add a layer of rice, followed by beans and corn. Top with broccoli and sauce.
