Tofu Broccoli Rice Casserole

Portion Size: 1 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 lbs. extra firm tofu, crumbledDivided, rinsed and drained. 
2 cups brown rice
1 cup onionsWash, trimmed and diced
2 cups broccoliWash, trimmed and diced or frozen and chopped
1 cup milk
4 cups low sodium vegetable brothOr may use 4 t. granules plus 4 cups water
½ teaspoon salt and pepper each To taste
1 cup low fat shredded cheddar cheeseShredded. For vegan: use vegan cheese

1Preheat oven to 350 F degrees. 
2Spray a baking dish with non stick cooking spray.
3Add tofu, rice, onions, broccoli, milk and broth. Season with salt and pepper. Stir .Cover.
4Bake 40-45 minutes. Remove cover. Top with cheese Cook until internal temperature 165 F. degrees
5Cook about 10 minutes or until cheese melts.
