Turning fresh vegetables into salads is a simple way to make them more enjoyable, flavourful, and versatile. Not only do salads add variety to your meals, but they also provide extra nutrients and powerful antioxidants that support overall health.

Before making any salad, it is important to wash, trim, and prepare the vegetables properly. Rinse all vegetables under cold running water to remove dirt and debris. Trim any stems, ends, or damaged parts.

Vegetables can then be cut to suit the salad. Options include:

  • Diced – small cubes for even bites
  • Sliced – thin or thick slices depending on the salad
  • Shredded – perfect for slaws and finely textured salads
  • Other shapes – ribbons, sticks, spiraled, or chunks as desired

Proper preparation ensures the vegetables are clean, safe to eat, and easy to enjoy in salads. Remember to wear gloves when handling ready to eat foods. 

Each vegetable salad can be made with one vegetable or a combination of raw vegetables, with a total amount of about 4 cups (approximately 8 half-cup servings). The vegetables are then tossed with a homemade simple dressing or a prepared salad dressing, usually about ¼ cup per salad, to enhance flavour without overpowering the freshness of the vegetables.
